Position: Sous Chef

We believe every plate tells a story.

So, we’re searching for a Sous Chef with a palate for serving up dishes that will create moments of delight.

Whenever and wherever our guests choose to dine.

Behind the scenes, you’ll ensure quality, maintain high standards and keep the kitchen running smoothly alongside our Head Chef.

A little taste of your day-to-day:

Every day is different, but you’ll mostly be:


* Manages kitchen operations and ensures compliance with all Food & Beverage policies, standards and procedures.


* Adhere to governmental regulations as well as brand standards and hotel or company policies and procedures 


* Estimates daily production needs on a weekly basis and communicates production needs to kitchen personnel daily.


* Ability to work closely with the Head Chef with all kitchen operations and preparation.


* Maintains purchasing, receiving and food storage standards.


* Ensures compliance with food handling and sanitation standards.


* Maintain close communication with department leaders to ensure proper menu productions, standards, quality and staffing.


* Work with Head Chef and Human Resources to ensure the departmental performance of staff is productive- assisting with the recruitment process


* Fostering and leading a positive work environment for all employees.


* Other ad-hoc duties – unexpected moments when we have to pull together to get a task done.


* Sound understanding of HIGA and assist the Head Chef with rostering

What we need from you:


* Certificate in culinary (commercial cookery) preferred 


* have 3-5 years’ experience as a Sous chef or similar in a high-volume outlet


* Completed Food Handling Certificate


* Must have the ability to manage a kitchen. 


* Understanding of Food Safety standards and HACCP.


* Computer knowledge and skill level for basic office functions


* Ability to work varied hours/days, including nights, weekends and holidays as needed.


* Completed Food Safety Supervisor Certificate – not necessary but advantageous
