Kitchen Stewarding Manager

What is the job?
A KST (Kitchen Stewarding) manager in a hotel is responsible for overseeing all cleaning and maintenance activities within the kitchen, ensuring it operates efficiently and hygienically. This includes managing staff, inventory, and equipment, as well as implementing and maintaining hygiene standards. 

Your day to day

 
 Staff Management:
•Recruiting, training, and supervising the KST staff. 
•Creating duty rosters and ensuring proper staffing levels. 
•Monitoring and evaluating staff performance. 
 Hygiene and Sanitation:
•Ensuring all kitchen areas, equipment, and utensils are cleaned and sanitized according to hotel standards. 
•Implementing and maintaining hygiene procedures to prevent foodborne illnesses and ensure a safe food environment. 
•Managing waste disposal and ensuring compliance with local regulations. 
 Inventory and Equipment:
•Maintaining a comprehensive inventory of all kitchen equipment, utensils, and cleaning supplies. 
•Ordering replacements and ensuring timely delivery. 
•Monitoring equipment maintenance and repairs, ensuring they are carried out promptly. 
 
 Operations and Efficiency:
•Optimizing workflow within the KST department to maximize efficiency and minimize waste. 
•Supervising dishwashing activities, including manual and machine washing. 
•Maintaining records of inventory, maintenance, and pest control. 
 
 Coordination and Communication:
•Collaborating with other hotel departments, such as the kitchen and food & beverage, to ensure smooth operations. 
•Communicating effectively with staff, supervisors, and other hotel personnel.
