Summary

ESSENTIAL DUTIES AND RESPONSIBILITIES:



* Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine.


* Washes pots, pans, and trays.


* Sweeps, mops, and sanitizes kitchen floors.


* Cleans floor mats, walls, ceiling, and air vents.


* Washes worktables, refrigerators, and meat blocks.


* Segregates and removes trash and garbage and places it in designated containers.


* Steam cleans or hoses out garbage cans and maintains designated trash receptacle area.


* Sorts silverware, chemical dip, and soiled flatware.


* Polishes silver using burnishing machine tumbler.


* Transfers supplies and equipment between storage and work areas.


* Maintains and properly stores chemicals in designated area.


* Washes and peels vegetables.


*  Attends regularly scheduled kitchen meetings.


* Stores food items in their proper location, i.e.

freezer, walk-ins, dry storage, etc.


* Must obtain and maintain a San Diego County Food Handlers and Responsible Beverage Service certification.
