About the Role
As Sous Chef with InterContinental Sydney Double Bay, you will be second in charge in a busy hotel kitchen providing support to the Executive Chef and leadership to the Kitchen team.
This is a hands-on role with full participation in the daily production of food to ensure planning and direction of service is produced to the highest quality and consistency to ensure hotel quality and revenue goals are met and costs are controlled.
A little taste of your day-to-day
People
* Develop, update, and implement standard recipe cards, menus, and departmental procedures.
* Prepare onboarding programs and provide training to kitchen and stewarding staff.
* Conduct performance reviews, probation meetings, and maintain staff records.
* Lead, support, and communicate effectively with chefs, cooks, kitchen attendants, and stewards.
* Ensure compliance with food safety standards (HACCP).
Responsible Business
* Liaise daily with stewarding on equipment, sanitation, and cleanliness.
* Promote and enforce OHS policies, hazard reporting, and corrective actions.
* Appoint and support health & safety representatives, first aid officers, and fire wardens.
* Deliver induction and refresher safety training, including emergency procedures.
Guest Experience
* Champion a positive guest culture through food quality, service, and presentation.
* Design guest-focused menus and organize food & beverage activities.
* Oversee preparation, presentation, and cleanliness to ensure consistent quality.
* Handle guest feedback and escalate issues when required.
Financial
* Monitor costs, budgets, and inventory while ensuring accurate recipe costings.
* Maintain market awareness, product knowledge, and set purchasing standards.
What we need from you
* Full working rights in Australia without restrictions (a kind reminder sponsorship is not available for this role)
* Certificate IV in Commercial Cookery is essential
